Caramel Custard Cake Recipe
This is absolutely heavenly, because in heaven, we are not gonna count calories!!

Ingredients
  • 4 extra big eggs, seperated
  • 50 ml cold water (4 tablespoons)
  • 250 ml sugar (1 cup)
  • 250 ml cake flour (1 cup)
  • 25 ml corn starch (2 tablespoons)
  • 2,5 ml baking powder (1/2 teaspoon)
  • 1 ml salt (1/4 teaspoon)
  • Filling:
  • 130 ml butter or margarine (1/2 cup + 1 teaspoon)
  • 250 ml castor sugar (1 cup)
  • 500 ml milk (2 cups)
  • 60 ml custard powder (1/2 cup)
  • 250 ml cream (1 cup)
  • 5 ml caramel essence (1 teaspoon)
  • 15 ml castor sugar (1 tablespoon, heaped)
  • 15 ml caramel instant pudding (1 tablespoon, heaped)

Directions
  1. Grease 2 or 4 round baking pans.
  2. The cake will be in four layers, it's up to you how many pans you are gonna use. If you use 2, you will have to cut each one in half.
  3. Beat the egg yolks, water and sugar until light and fluffy and sugar dissolved.
  4. Sift dry ingredients.
  5. Sift into wet mixture while folding it in lightly.
  6. Beat the egg whites until stiff.
  7. Fold into mixture.
  8. Bake at 180 degreesC ( 360 degrees F) for 20 minutes.
  9. Let it cool down totally before dividing the two layers into 2.
  10. Tip: Use a piece of thread to cut it smoothly.
  11. Filling:
  12. Beat the butter and sugar until creamy and fluffy.
  13. Make a thick custard from the milk and custard powder.
  14. Let it cool down.
  15. Whisk the two mixtures together.
  16. Put into freezer to totally cool down.
  17. Beat the cream until stiff.
  18. Divide in two.
  19. Stir in caramel essence and castor sugar into one half of the cream.
  20. Beat the instant pudding into the other half of the cream.
  21. Put one mixture on one layer of cake, put another layer of cake on top.
  22. Put the other mixture on the second layer.
  23. Repeat.
  24. Enjoy!!
