quick and easy casserole with a Mexican favorite spin to it. Easy to make and the whole family will love it!

Ingredients
  • 2 lbs of lean ground beef
  • 1 package knorr lipton fiesta sides (spanish rice)
  • 1 can of rosarita fried beans (traditional)
  • 6-8 flour Torillas (medium size)
  • 2 cups of chopped white onion
  • 2 cups of chopped tomato
  • 2 cups of sliced olives
  • 4-6 cups of cheese (cheddar or mixed is okay )
  • sour cream and pico pica taco sauce for garnish

Directions
  1. preheat oven 350 degrees
  2. brown and drain ground beef (while browning ground beef add your choice of seasoning taco season, onion powder, garlic powder, salt, etc)
  3. cook spanish rice as directed on package
  4. warm up beans via microwave or stove top
  5. line casserole dish with flour torillas
  6. spread a thick layer of beans, ground beef, and rice top it with cheese
  7. add another layer torillas and repeat layer of beef, beans, rice and cheese
  8. on final layer over it up with last torillas add cheese , tomato, and onion and olives on top.
  9. place in oven and bake for 40 minutes or until cheese is melted
  10. let it cool and cut and serve with garnish and enjoy!!
