Lentil And Hazlenut Patties Recipe

Ingredients
  • 3 cups dry lentils
  • 1 med onion, chopped
  • 1 cup whole wheat bread crumbs
  • 1 Tbsp chopped fresh parsely
  • 3 eggs
  • 1 cup finely chopped roasted hazelnuts
  • 1/2 tsp thyme
  • 1 tsp basil
  • 1 1/2 tsp salt
  • pepper to taste
  • 1-2 Tbsp olive oil

Directions
  1. Cook lentils according to package directions (or, if using non-packaged lentils, add lentils to boiling water and simmer for 30 minutes-1 hour or until soft); drain and cool.
  2. Combine lentils, onion, bread crumbs, parsely, eggs, and nuts.
  3. Stir in thyme, basil, salt, and pepper.
  4. Mold into 16 burger-sized patties.
  5. Grill patties on BBQ or indoor grill until cooked through. Or, if using frying pan, heat oil on med high heat.
  6. Add four patties at a time and brown.
  7. Remove patties from heat and drain on paper towels.
  8. Transfer to a platter and serve. Yum!

I grew up on lentil patties, I'm trying to get my mom to give me the version she used to make but she always says she forgets.. I can never get them to stick together to taste the way she made them, I remember salty and mayo.
