Lentil And Hazlenut Patties

- 3 cups dry lentils shopping list
- 1 med onion, chopped shopping list
- 1 cup whole wheat bread crumbs shopping list
- 1 Tbsp chopped fresh parsely shopping list
- 3 eggs shopping list
- 1 cup finely chopped roasted hazelnuts shopping list
- 1/2 tsp thyme shopping list
- 1 tsp basil shopping list
- 1 1/2 tsp salt shopping list
- pepper to taste shopping list
- 1-2 Tbsp olive oil shopping list
How to make it
- Cook lentils according to package directions (or, if using non-packaged lentils, add lentils to boiling water and simmer for 30 minutes-1 hour or until soft); drain and cool.
- Combine lentils, onion, bread crumbs, parsely, eggs, and nuts.
- Stir in thyme, basil, salt, and pepper.
- Mold into 16 burger-sized patties.
- Grill patties on BBQ or indoor grill until cooked through. Or, if using frying pan, heat oil on med high heat.
- Add four patties at a time and brown.
- Remove patties from heat and drain on paper towels.
- Transfer to a platter and serve. Yum!

I grew up on lentil patties, I'm trying to get my mom to give me the version she used to make but she always says she forgets.. I can never get them to stick together to taste the way she made them, I remember salty and mayo.
