Sirloin Veggie Stir-Fry

- 11/2 lbs trimmed boneless beef sirloin,sliced 1/4" thick shopping list
- 3 T. soy sauce shopping list
- 1 bunch broccoli rabe,florets seperated and long stems cut into1/2" pieces or broccoli cut into 2" pieces shopping list
- 1/2c sun dried tomatoes packed in oil and garlic ,halved,plus 3T of their oil. shopping list
- 2 Lg. cloves garlic,chopped shopping list
- 2 bunches scallions,cut into 1' lenghts shopping list
- 1-2 pickled cherry peppers or other hot peppers choppe1/2 lb angel hair pasta shopping list
- 1c. beef broth shopping list
- 1T. cornstarch shopping list
How to make it
- In bowl,combine 11/2 lbs of sirloin and soy sauce;set aside
- In wok or lg. skillet,bring enough water to reach depth of 2" to a boil,add broccoli rabe,lower heat,simmer 3 mins. Drain in colander,rinse well with cold water;set aside
- Return wok to high heat,add 2 T sun dried tomato oil and garlic;stir fry 1 min.
- Add sirloin and stir fry for 2 mins.
- Transfer meat and it's juices to a bowl. Add remaining 1T sundried tomato oil to wok and then the scallions,pepper and sun dried tomatoes;stir fry 1 min.
- In lg. pot of boiling ,salted water,cook pasta till al dente;about 3 mins. In small bowl stir together beef broth,cornstarch and remaining 11/2 T soy sauce. Add mixture to wok.stirring until thickened,about 1 min. Return thee meat,it's juices,the broccoli rabe to the wo;cook until heated thru. Divide pasta among 4 plates;top with steak and vegetables.
