Healthy Carrot  Zucchini Muffins Recipe
For an extra cinnamon pop I use cinnamon applesauce. I also sprinkle with chopped walnuts on occasion.

Ingredients
  • 1/4 c. canola oil
  • 1/2 c. brown sugar
  • 1 egg
  • 3/4 c. applesauce
  • 1 c. grated carrots
  • 1 c. grated zucchini
  • 1 c. all-purpose whole wheat flour
  • 3/4 c. all-purpose flour
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1/2 t. ground nutmeg
  • 1/2 t. salt

Directions
  1. Preheat oven to 400F
  2. In a large bowl, whisk together oil and sugar.
  3. Beat in egg, then applesauce.
  4. Stir in carrots and zucchini.
  5. In another large bowl, whisk together flours, baking powder, cinnamon, nutmeg and salt.
  6. Fold dry ingredients into wet, until just mixed.
  7. Spoon batter to the very top of sprayed, paper-lined muffin cups and bake 18-20 minutes or until a toothpick comes out clean when inserted in a muffin.

I just made these tonight and they were excellent! Internet recipes can be sketchy to say the least, especially when it comes to baking healthfully. But these were perfect! I was so pleased with the result. Both of my non-health-conscious roommates said they were the best muffins they had ever had in their lives! No kidding! Thanks so much for the recipe!

Alterations


These are great! i only made a couple of alterations. Instead of the 3/4 cup of white flour, i used a well rounded 1/2 cup of kamut flour plus a few Tbsp's of wheat germ. I also happened to have about 1/2 cup of home made trail mix that i added into the mix (pumpkin & sesame seeds, dried peaches, cranberries & rasins, cashews,pistachios, almonds, hazlnuts & walnuts)


The Nutmeg kills this recipe. Listen- just add a dash; even the cinnamon you can cut back on. TASTE The VEGETABLES, not the spices. Also, if you mess with the types of flour (i.e. use all wheat) you have to disregard cooking times and just look for a muffin that looks "done". Think outside the "recipe".
