English Cucumbers With Garlic And Yogurt Sauce Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Overton Estate in Dallas, Texas in 1992.

Ingredients
  • 2 English cucumbers, peeled
  • 2 cups plain low-fat yogurt
  • 2 garlic cloves, peeled and crushed with a pinch of salt
  • 3 teaspoons dried mint, crumbled and pressed through a sieve
  • 1 teaspoon olive oil
  • Sprigs of fresh mint for garnish

Directions
  1. Finely dice cucumbers.
  2. In medium bowl combine yogurt, garlic and 3/4-teaspoon salt.
  3. Add diced cucumber and dried mint then blend well.
  4. Cover and refrigerate until well chilled about 1 hour.
  5. Drizzle with the olive oil and sprigs of fresh mint to serve.
