  • HONEY-CHIPTOLE GLAZE:
  • 1 clove garlic, peeled and left whole
  • 2 TBSPS chopped fresh cilantro
  • 2 TBSPS chipotle paste (see header note)
  • 2 TBSPS honey
  • 2 TBSPS apple cider vinegar
  • 1 TBSP packed brown sugar
  • 1 TBSP whole-grain Dijon mustard
  • Pinch of salt
  • Pinch of ground cumin

  • Non-stick cooking spray
  • 1 large yellow (or cooking) onion, sliced
  • One 2 1/2 - 3 pound bone-in turkey breast half
  • 1/4 cup beer of your choice
  • 1 lime, sliced

Directions
  1. To make the glaze, place the garlic and cilantro in a small food processor. Pulse to chop finely. Add the chipotle paste, honey, vinegar, brown sugar, mustard, salt, and cumin. Process for 30 seconds to make a smooth puree.
  2. Spray the inside of the crock pot with nonstick cooking spary. Arrnage the onion slices in the bottom of the slow cooker. Place the turkey breast, breast side up, on top of the onions. Pour in the beer.
  3. Spread all of the honey-chipotle glaze over the surface of the turkey. cover the surface of the breast with the lime slices.
  4. Cover and cook on HIGH for 4 to 5 hours. Don't peak. The turkey is done when the internal temperature reaches 170 - 180 F on an instant-read thermometer.
  5. When the turkey is cooked, remove it from the crock with tongs, and place on a platter; cover with foil and let stand for 10 minutes before carving.
  6. There will be plenty of liquid in the crock pot from the turkey. Strain the cooking liquid through a cheesecloth-lined colander and press to squeeze the juice from the onions.
  7. Place the liquid in a small saucepan. Heat to boiling and reduce a bit.
  8. Serve the turkey, sliced, with the juice on the side.

YUM! One of the best slow cooker recipes I've ever made. If you love these type of flavors don't miss this recipe. I used the leftovers for spicy turkey enchiladas the next day. Thanks so much for posting this recipe. Loved it.

I didn't have time for a crockpot, and I had turkey tenderloins. So, I made the sauce, sliced the onions, placed them in the bottom of a shallow casserole dish, placed the tenderloins on top, spread the sauce over them, poured some beer on hand around it and baked at 350 degrees for 30 minutes. Then, I removed the turkey and onions placed them on a dish, put the sauce in a pan and sprinkled some flour in, whisked it on med.high heat and made a gravy. delicious!!
