Ketchup Garlic Chicken Recipe
Fried chicken brings out the kid in me, but this makes me feel like im regressing all the more. Graced with ketchup.

Ingredients
  • Chicken in small bite size pieces, corn starch, flour, fillet or not. Garlic, 5 cloves minced, ketchup, soy sauce, brown sugar, small chili pepper, salt, water.

Directions
  1. Amount of chicken is upto you, but for this demo, let's have a 2 chicken wings, 2 drumsticks, chicken breast cut up.
  2. Marinate the chicken with salt, as desired, let it stand while preparing the rest of the ingredients.
  3. Proportion 2 parts flour to 1 part cornstarch and mix the poweders thoroughly, this is to be used to coat the chicken.
  4. Dust the chicken with the flour and cornstarch combination. Allow each piece of dusted chicken to stand awhile so that the powder would adhere to the chicken. Give it say 5 minutes.
  5. Deep fry the chicken, just like you would in ordinary fried chicken.
  6. Set aside the fried chicken.
  7. Get 3 tablespoons from oil used for frying. If it's possible for you to use the pan you used for frying the chicken, just pour out the oil and scoop back some 2 tablespoons.
  8. Saute the minced garlic but do not brown it. Turn off the fire if you think you are going over.
  9. Throw in the fried chicken pieces (at which point you may turn up the heat oncemore).
  10. Do as though you're stir frying, Add a tablespoon brown sugar at this point, (vary as desired).
  11. Medium to low fire please and keep on stirring so it wouldn't stick.
  12. Stir fry some more, like the chinese do with their food when cooking in woks. 'Til the brown sugar melts signigicantly.
  13. Add the ketchup, splatter it all over the chicken, that's approximately, a third of a cup.
  14. What your cooking should be smelling really good by now.
  15. Optional: mince the chili pepper (labuyo) add it to the mix.
  16. Last: Making an emulsion out of it all...turn up the heat, and slowly spoon in say a table spoon at a time of water, hear the fizzing? Stir while doing this...total amount of water to add...around a third of a cup.
  17. When that's done turn off the heat.
  18. Garnish with cut up spring onions half inch in length.
  19. For the Garlic person, top it with fried garlic.

Alterations


I forgot about the soy sauce, it's optional, a few drops on the newly plopped ketchup (right before stirring the ketchup)the soy sauce will modify the taste and color of the ketchup...also when doing the emulsion part, add enough water til you get the amount of sauce you desire. A third of a cup works for me, coz it would be thick enough.
