Ketchup Garlic Chicken

- chicken in small bite size pieces, corn starch, flour, fillet or not. garlic, 5 cloves minced, ketchup, soy sauce, brown sugar, small chili pepper, salt, water. shopping list
How to make it
- Amount of chicken is upto you, but for this demo, let's have a 2 chicken wings, 2 drumsticks, chicken breast cut up.
- Marinate the chicken with salt, as desired, let it stand while preparing the rest of the ingredients.
- Proportion 2 parts flour to 1 part cornstarch and mix the poweders thoroughly, this is to be used to coat the chicken.
- Dust the chicken with the flour and cornstarch combination. Allow each piece of dusted chicken to stand awhile so that the powder would adhere to the chicken. Give it say 5 minutes.
- Deep fry the chicken, just like you would in ordinary fried chicken.
- Set aside the fried chicken.
- Get 3 tablespoons from oil used for frying. If it's possible for you to use the pan you used for frying the chicken, just pour out the oil and scoop back some 2 tablespoons.
- Saute the minced garlic but do not brown it. Turn off the fire if you think you are going over.
- Throw in the fried chicken pieces (at which point you may turn up the heat oncemore).
- Do as though you're stir frying, Add a tablespoon brown sugar at this point, (vary as desired).
- Medium to low fire please and keep on stirring so it wouldn't stick.
- Stir fry some more, like the chinese do with their food when cooking in woks. 'Til the brown sugar melts signigicantly.
- Add the ketchup, splatter it all over the chicken, that's approximately, a third of a cup.
- What your cooking should be smelling really good by now.
- Optional: mince the chili pepper (labuyo) add it to the mix.
- Last: Making an emulsion out of it all...turn up the heat, and slowly spoon in say a table spoon at a time of water, hear the fizzing? Stir while doing this...total amount of water to add...around a third of a cup.
- When that's done turn off the heat.
- Garnish with cut up spring onions half inch in length.
- For the Garlic person, top it with fried garlic.
