Got a kiddo who doesn't dig veggies? Hide them in pancakes or biscuits. Namaste mixes are allergy-free and taste great. These also freeze well and can be defrosted in a ziploc on the counter for that day.

Ingredients
  • Namaste Waffle and Pancake mix (or your favorite sugar-free blend)
  • Safflower or Canola oil
  • 1 Egg
  • 1 c. Rice milk or water
  • 3 oz. spinach (or pureed carrots, zucchini or sweet potatoes)

Directions
  1. Combine 1 egg, 1 T oil, spinach and enough rice milk or water for desired consistency (~1 cup).
  2. Add 2 1/3 c. of the pancake mix, stir until blended.
  3. Pour spoonfuls (for silver dollar size) onto preheated skillet using 1-2 T of oil as needed.
