I have finally found a great recipe for a baked potato soup. It melts in your mouth and feels like you are drinking a baked potato with all the fixings.

Ingredients
  • 4 lg. baking potatoes
  • 2/3 cup butter or margarine
  • 2/3 cup flour
  • 6 cups milk
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 4 green onions chopped
  • 12 slices bacon, cooked and crumbled
  • 1 1/4 cups shredded cheddar cheese
  • 1 (8 oz) carton of sour cream
  • 1 tsp. of chicken base

Directions
  1. Wash potatoes and bake in a preheated 400 degree oven until done. Cool and cut into cubes.
  2. Melt butter over low heat; add flour, stirring until smooth.
  3. Gradually add milk and cook over medium heat.
  4. Stir until mixture is thick and bubbly.
  5. Add potato cubes, salt, pepper, onion, bacon, cheese, and chicken base.
  6. Cook until well heated.
  7. Stir in sour cream.
  8. Once the soup is ready my secret is I fill a blender about half way with the cooked soup and blend it up on high until it's creamy. I then re-add this to the soup to make it even more creamier.
