Fish In White WIne With Olives Recipe
A quick, yet impressive main dish. Looks very nice too! Goes well with roast potatoes or rice. (Got this from a magazine and tweaked it a little.)

Ingredients
  • 2 pounds of white fish fillets (cod/ halibut/tilapia)
  • 1 bottle of white wine
  • 1 cup mixed olives (spanish, kalamata, spicy - your choice)
  • zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • salt and pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon of raosted garlic flakes (optional)
  • fresh or dried parsley to garnish

Directions
  1. Heat oven tp 400 degrees F.
  2. Place fish in small roasting pan.
  3. Add enough wine to reach halfway up the sides of the fish.
  4. Add olives and lemon juice and zest over fish.
  5. Drizzle with olive oil and season with red pepper, salt and pepper (and garlic if you are using it)
  6. Roast until the fish is cooked through, approximately 20-25 minutes. It should flake easily with a fork.
  7. Remove from oven and sprinkle with parsley.
  8. Place fish on plates and spoon the olives and wine sauce over the top.

Alterations


hmmm at 400degrees and for 20-25 minutes seems a bit much, how about trying oven at 375degrees for about 15-20 mins??? because white wine actually dries out any kind of meat, so you might not want to give it a lot of time
