Eggnog Mousse Recipe
Not a "true" mousse, but it's easy, so what the heck. Cooking time is chilling time.

Ingredients
  • 2 cups cold eggnog
  • 1-1/2 cups cold milk
  • 2 pkg. (4-serving size each) vanilla flavor instant pudding & pie filling
  • 1/4 tsp. ground nutmeg
  • 2-1/2 cups thawed French vanilla flavored whipped topping, divided

Directions
  1. Pour eggnog and milk into large bowl.
  2. Add dry pudding mixes and nutmeg. Beat with wire whisk 2 min. or until well blended.
  3. Gently stir in 1-1/2 cups of the whipped topping.
  4. Spoon evenly into 5 dessert dishes or 1-1/2-qt. serving bowl; cover.
  5. Refrigerate at least 2 hours.
  6. Top evenly with the remaining 1 cup whipped topping just before serving.
  7. Sprinkle with additional nutmeg, if desired.

OMG! So simple and yet tasty! I'm using it as a filling for chocolate cups to take to my office Christmas party!

Update: Rave reviews from coworkers and everyone else on this. It's a keeper!


Tastes exactly like the much-harder version that uses gelatin and sometimes will set and sometimes just won't. This came out beautifully in about 10 minutes TOTAL mixing time, chilled and was perfection by lunchtime.

I also used light eggnog, 1% milk, and two packages of fatfree/sugar free pudding mix. It was still truly wonderful. Thanks!
