Liver Dumplings For Soup Recipe

Ingredients

1Lb. Beef liver (pureed)

1 Tbl. Butter

1 tsp. dried Marjoram ( crushed)

1 tsp. Sage ( crushed)

1 Clove Garlic Minced

1/4 tsp Salt

2 Eggs ( beaten)

1 tsp. dried Parsley

crushed Saltine crackers to make mixture workable ( About 1 & 1/2 C)

Directions

Mix all ingredients together . Mixture should be stiff enough to allow to make into small ( 1 -1 1/2 inch balls )

Drop into boiling water . Cook for about 10 minutes( cut into one to check for doneness.

Remove to paper towels to drain off excess water.

These can be frozen for 2 months.

To use Bring soup ( chicken broth) to a boil and drop in the dumplings cook sufficiently to heat the dumplings and serve approximately 2-3 per cup or bowl.
