Liver Dumplings For Soup Recipe

Ingredients
  • 1Lb. Beef liver (pureed)
  • 1 Tbl. Butter
  • 1 tsp. dried Marjoram ( crushed)
  • 1 tsp. Sage ( crushed)
  • 1 Clove Garlic Minced
  • 1/4 tsp Salt
  • 2 Eggs ( beaten)
  • 1 tsp. dried Parsley
  • crushed Saltine crackers to make mixture workable ( About 1 & 1/2 C)

Directions
  1. Mix all ingredients together . Mixture should be stiff enough to allow to make into small ( 1 -1 1/2 inch balls )
  2. Drop into boiling water . Cook for about 10 minutes( cut into one to check for doneness.
  3. Remove to paper towels to drain off excess water.
  4. These can be frozen for 2 months.
  5. To use Bring soup ( chicken broth) to a boil and drop in the dumplings cook sufficiently to heat the dumplings and serve approximately 2-3 per cup or bowl.
