Pizza Puff Casserole Recipe
I created this casserole after making Pastichio. I like the puffiness of the topping.

Ingredients
  • 1 pound ground beef
  • 1/4 cup chopped onion
  • 1 cup tomato sauce (or use spagetti sauce-your favorite type)
  • For topping:
  • 1/4 cup butter, melted
  • 3 1/2 tbsp flour
  • 3 cups milk, heated to lukewarm
  • 5 eggs, separated

Directions
  1. in a large skillet. add meat and onion and cook until meat is brown. add tomato paste, cover and simmer for 30 minutes. If any liquid remains, cook meat uncovered until liquid has evaporated.
  2. place in the bottom of a 9 x 13 pan.
  3. Sprinkle top with 3/4 of the cheese.
  4. Meahwhile, to make topping, melt butter in a large saucepan. Add flour and mix with a whisk for several minutes. Gradually add milk while stirring; simmer until sauce thicken, stirring frequently.
  5. Separate eggs. Beat whites in a bowl until they pile softly. Beat yolks in another bowl. Fold yolks and whites together, then fold in sauce. Spoon over meet and meat and cheese. Sprinkle with remaining cheese.
  6. Bake at 325 degrees for 45 minutes or until golden borwn. Cool slightly before serving.
