Blackberry Breakfast Bars

- 2 cups fresh or frozen blackberries shopping list
- 2 tablespoons granulated sugar shopping list
- 2 tablespoons water shopping list
- 1 tablespoon lemon juice shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1 cup all purpose flour shopping list
- 1 cup quick cooking rolled oats shopping list
- 2/3 cup packed brown sugar shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1/8 teaspoon baking soda shopping list
- 1/2 cup butter melted shopping list
How to make it
- In a medium saucepan combine berries, sugar, water, juice and cinnamon.
- Bring to a boil then reduce heat and simmer uncovered for 8 minutes.
- Stir frequently then remove from heat.
- In mixing bowl stir together flour, oats, brown sugar, cinnamon and soda.
- Stir in melted butter until thoroughly combined.
- Set aside 1 cup of the oat mixture for topping.
- Press remaining oat mixture into an ungreased square baking pan.
- Bake at 350 for 25 minutes.
- Carefully spread filling on top of baked crust.
- Sprinkle with reserved oat mixture.
- Lightly press oat mixture into filling.
- Bake at 350 for 25 minutes.
- Cool in pan on a wire rack then cut into bars.
