Tilapia Biryani

- 5 tilapia fish filets shopping list
- 2 tbs butter shopping list
- 4 cloves garlic, peeled and chopped shopping list
- 1 thumb-size length of ginger, peeled and chopped shopping list
- 1 tsp chilli powder shopping list
- 1 tsp turmeric powder shopping list
- 1 tspp cumin powder shopping list
- 1 tsp sea salt shopping list
- masala vegetables shopping list
- 2 tbs butter shopping list
- 2 tbs garam masala shopping list
- a handful of raw cashews shopping list
- 1 red onion, peeled and sliced into thin rounds shopping list
- 3 serrano green chilies chopped shopping list
- 1 thumb-size length of ginger, peeled and chopped shopping list
- 4 cloves garlic, peeled and chopped shopping list
- 1 tomato diced shopping list
- 1/2 cup green peas shopping list
- 4 leaves of kale sliced into strips shopping list
- 3 small purple potatoes shopping list
- rice shopping list
- 3 cups basmati rice shopping list
- 1 tbs butter shopping list
- 2 cloves garlic, smashed shopping list
- 1 red onion, peeled and chopped shopping list
- 5 cm stick cinnamon shopping list
- 2 cardamom pods the green ones shopping list
- 5 -6 cloves shopping list
- 1 tsp saffron threads shopping list
- 1 tsp sea salt shopping list
- 3 cups unsalted stock or water shopping list
- 1/2 cup of equal parts chopped mint and cilantro shopping list
- Garnish shopping list
- 4 tbs yogurt shopping list
- Fried red onions shopping list
- fresh cilantro leaves shopping list
How to make it
- Fish: Heat oil in a wok and brown the chopped onion, garlic and ginger. Add a little water to the spice powders to make a paste and fry over a moderate fire till fragrant.
- Add salt . Turn the fish until firm and browned and remove from the wok save any leftover oil to flavor the rice. set fish aside.
- Rice: Wash and drain the rice. in a rice cooker add the reserved butter and rice grains. Pour stock over the rice. Add salt, saffron threads and 1/2 cup of equal parts chopped mint and cilantro stir to evenly distribute spices etc.
- Set rice cooker program for white rice and cook till the cooker beeps.
- while the rice is cooking combine and stir fry the masala vegetble ingredients until they are toasted and the spices are evenly distributed.
- when the rice is done fluff the rice and get an oven safe pot.
- layer the rice then the fish then rice then the veggies, then the rice. until everything is in the pot.
- bake for 30-40 minutes at 350.
- remove the layers into separate serving dishes ie rice, fish, veggies.
- serve with fried red onions and yogurt on the side.
