How to make it

  • Fish: Heat oil in a wok and brown the chopped onion, garlic and ginger. Add a little water to the spice powders to make a paste and fry over a moderate fire till fragrant.
  • Add salt . Turn the fish until firm and browned and remove from the wok save any leftover oil to flavor the rice. set fish aside.
  • Rice: Wash and drain the rice. in a rice cooker add the reserved butter and rice grains. Pour stock over the rice. Add salt, saffron threads and 1/2 cup of equal parts chopped mint and cilantro stir to evenly distribute spices etc.
  • Set rice cooker program for white rice and cook till the cooker beeps.
  • while the rice is cooking combine and stir fry the masala vegetble ingredients until they are toasted and the spices are evenly distributed.
  • when the rice is done fluff the rice and get an oven safe pot.
  • layer the rice then the fish then rice then the veggies, then the rice. until everything is in the pot.
  • bake for 30-40 minutes at 350.
  • remove the layers into separate serving dishes ie rice, fish, veggies.
  • serve with fried red onions and yogurt on the side.
