This is a dish I love. I stopped cooking it because Rice Roni came out with a line of cheesy rices that I loved. But alas, they quit marketing it. So I'm back to this great standard. It's quick and easy and oh so yummy!

Instead of using sliced or cubed cheese, why not make it easy on yourself and use velveeta melted cheese? it makes the process alot easier. cook on low an extra 5 minutes if you like your rice "plump". Then let it stand for extra thick cheesy rice.
