This is a healthy alternative to a calorie filled pizza. It can also be modified as a snack or be consumed as a whole meal. depending the type of ingredients used, this meal is under 500calories.

Ingredients
  • 2 ounce ricotta
  • 2 ounce mozzarella
  • 2 small 100% whole grain pita
  • 10 grape tomatoes
  • 1 mushroom & herbs chicken sausage link

Directions
  1. Preheat oven to 325 degrees
  2. lay small pita rounds on foil
  3. sprinkle ricotta an mozzarella cheese on pita rounds
  4. slice grape tomatoes and place 5 on each pita round
  5. cut up one link of chicken sausage and distribute
  6. place in oven and bake for 30 min or until chicken sausage is cooked

Great recipe! I recently made a similar type of pizza but with Whole Wheat pizza dough from Trader Joe's. I put a LOT of veggies (onions, peppers, a couple of sun dried tomatoes, basil, olives, squash, mushrooms) in it so I could cut down on the cheese and rolled the dough down VERY thin to minimize the carbs.
