Turkey Mini Meatloaves Recipe
This recipe is from Pampered Chef and I use the mini loaf pan when making it. I think you can use any 9 X 5 inch pan

Ingredients
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, pressed
  • 2 pounds lean (93%) ground turkey
  • 2 eggs
  • 1 cup chili sauce, divided
  • 3/4 cup seasoned dry bread crumbs (italian is the best)
  • 1/4 t. ground black pepper

Directions
  1. Preheat oven to 350°F. Finely chop bell pepper and onion using food chopper. Press garlic using garlic press. Combine bell pepper, onion, garlic, turkey, eggs, 1/2 cup of the chili sauce, bread crumbs and black pepper in medium sized bowl, mix lightly but thoroughly using a spatula.
  2. For each loaf, shap about 1 1/4 cups meat mixture into loaf; place in mini loaf pan. Bake 30 minutes. Spread remaining chili sauce evenly over tops of loaves. Bake an additional 20-30 minutes or until meat is no longer pink in center of loaves and internal temperature reaches 180°F.
  3. Remove pan from oven to cooling rack; let stand 10 minutes. Remove loaves from pan using small spatula. Cut into slices and serve.
  4. 1/2 loaf = 280 calories, 11g fat, 3g saturated fat, 140mg cholesterol, 19g carbs, 23g protein, 1170mg sodium, less than 1g fiber.
