My families' new fave. For variations, I like to substitute chopped zucchini for the chicken. We've also enjoyed this on spaghetti squash instead of pasta.

Ingredients
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. dried basil
  • 4 minced garlic cloves
  • 1 tsp. dried oregano
  • 1 tsp. powdered rosemary
  • 1 pound skinless boneless chicken breast, cut into 1-inch pieces
  • 1/2 pound mushrooms, finely chopped
  • 1 pound whole wheat spaghetti

Directions
  1. Heat oil in a pan, then stir in the basil, garlic, oregano, and rosemary.
  2. Add the chicken and reduce heat to medium, stirring constantly.
  3. When the chicken is done, add the mushrooms.
  4. Reduce heat and cover and cook for 5 minutes.
  5. Serve over hot pasta.
