Nut Brittle Recipe
This is a great side to any dessert but goes very well with brandied pears

Ingredients
  • 2 cups sugar
  • 1 cup light corn syrup
  • ½ cup margarine or butter
  • 2 ½ cups coarsely chopped nuts
  • 1 ½ teaspoons baking soda, sifted

Directions
  1. Butter 2 large baking sheets and set aside.
  2. Butter sides of a heavy 3-quart saucepan.
  3. In saucepan combine sugar, corn syrup, margarine or butter, and ½ cup water.
  4. Cook and stir over medium-high heat to boiling.
  5. Clip candy thermometer to side of pan.
  6. Cook and stir over medium-low heat to 275°F, soft-crack stage (about 30 minutes).
  7. Add nuts
  8. Cook and stir to 295°F, hard-crack stage (15 to 20 minutes more)
  9. Remove saucepan from heat and remove thermometer.
  10. Quickly sprinkle soda over mixture, stirring constantly.
  11. Immediately pour onto prepared baking sheets.
  12. Cool then break into pieces.
  13. Store tightly covered. Makes about 1¼ pounds (72 serings).
