Apple Pear And Sultana Compote With Brandy Cream Recipe
This is a recipe I really like. I came up with it trying to use up the glut of apples we get in the UK around autumn time.

Ingredients
  • 3 eating apples cored and cut into small pieces
  • 1 pear cored and cut into small pieces
  • 1 desert spoon sultanas or raisins
  • 2 tspns honey
  • orange peel 3 cm approx (make sure there is no pith)
  • mixed spice (a sprinkling)
  • cream or creme fraiche
  • icing sugar
  • brandy

Directions
  1. Put the apples, pears, dried fruit, and honey in a saucepan and put on the lowest possible heat.
  2. Sprinkle over the mixed spice and after a short time once the honey has melted give the saucepan a quick shake to mix the ingredients. Lay the orange peel on top, then put a lid on the saucepan and leave to cook for 10 minutes until the fruit has softened. Take the lid off half way through cooking process.
  3. mix the cream ( I sometimes whip up the cream) or creme fraiche with the icing sugar and a splash of brandy to your taste -according to how sweet or boozy you like it!
  4. Remove the orange peel and serve the hot fruit with the brandy cream. Enjoy!
