Pollys Chorizo Pie Recipe
This dish is easy to make and a nice change from regular pasta and sauce meals. Even better the next day as leftovers. This is a fool proof recipe you cant mess up. Also great served with spanish rice.

Ingredients
  • 1 Deep dish pie crust
  • 1 pie crust top( rolled kind)
  • 6 - 6 inch links of Chorizo,removed from casing, crumbled and fried in 1 inch peices
  • 3 cup pasta sauce from jar or homemade
  • 1 lg onion chopped
  • 2 tps chopped garlic
  • 2 cups Shredded Mozzarella cheese
  • 1 tbsp chilli powder
  • Salt & Pepper to taste

Directions
  1. Fry Chorizo in skillet as listed above
  2. Remove and drain on papertowels
  3. Saute chopped onion and garlic in grease from sausage
  4. Add sausage and sauce to sauted onion mixture
  5. Add chillie powder, salt and pepper
  6. In Pie shell layer sausage/sauce mixture, then cheese making 2 layers of each
  7. Add top crust, make 4 slits in crust.
  8. Bake at 375 for about 30 minutes
  9. When pie shell is cooked and cheese is seeping out of the slits, the pie is done
  10. Cool for 15 minutes, cut and enjoy.
  11. This is also great over pasta instead of in a pie shell
  12. I have also added mushrooms, chopped tomatoes, or sliced eggplant
  13. Let your imagination go wild.
