Lamb and Lentil Soup

- 1 - bag dried lentils shopping list
- 3 - quarts chopped tomatoes with juice shopping list
- 3 - cloves minced garlic shopping list
- 2 - onions, diced shopping list
- 4 - carrots, diced shopping list
- 2 to 3 - pounds lamb, boned, cubed shopping list
- 1 - box frozen chopped spinach (thawed) OR 2, 10 oz bags of fresh, chopped shopping list
- 1 - 10 oz package of fresh mushrooms (any), diced shopping list
- 4 - tbls olive oil shopping list
- 2 - tbl dried oregano shopping list
- 2 - tbl cumin shopping list
- 1/4 - cup red wine vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- 1. Add tomatoes to slow cooker, turn to high
- 2. Add oregano, cumin, spinach and vinegar to slow cooker
- 3. Heat oil over med-high heat in skillet
- 4. Salt and pepper lamb, add to skillet and quickly saute until meat is cooked to your liking (medium for me)
- 5. Add lamb, with oil, to slow cooker
- 6. Add onions, garlic, carrots and mushrooms to skillet - cook until carrots are crisp-tender (about 8 minutes), add to slow cooker
- 7. Cook on High for 90 minutes, taste add salt/pepper as needed
