Lamb And Lentil Soup Recipe
Inexpensive cuts of lamb, lentils, onions, garlic and spinach make this a "souper" healthy and cheap meal!

Ingredients
  • 1 - bag dried lentils
  • 3 - quarts chopped tomatoes with juice
  • 3 - cloves minced garlic
  • 2 - onions, diced
  • 4 - carrots, diced
  • 2 to 3 - pounds lamb, boned, cubed
  • 1 - box frozen chopped spinach (thawed) OR 2, 10 oz bags of fresh, chopped
  • 1 - 10 oz package of fresh mushrooms (any), diced
  • 4 - tbls olive oil
  • 2 - tbl dried oregano
  • 2 - tbl cumin
  • 1/4 - cup red wine vinegar
  • salt and pepper to taste

Directions
  1. 1. Add tomatoes to slow cooker, turn to high
  2. 2. Add oregano, cumin, spinach and vinegar to slow cooker
  3. 3. Heat oil over med-high heat in skillet
  4. 4. Salt and pepper lamb, add to skillet and quickly saute until meat is cooked to your liking (medium for me)
  5. 5. Add lamb, with oil, to slow cooker
  6. 6. Add onions, garlic, carrots and mushrooms to skillet - cook until carrots are crisp-tender (about 8 minutes), add to slow cooker
  7. 7. Cook on High for 90 minutes, taste add salt/pepper as needed

This recipe sounds real tasty and I am going to try it tonight for supper. However, in the directions it doesn't say when to add the lentils, or the size of the bag? Thanks for the recipe!
