Meat loaf with mushroom sauce

- For the loaf: shopping list
- 2 large pieces of toasted bread, ready made shopping list
- 1/2 cup of milk shopping list
- 1/2 cup of soda water shopping list
- 750g of minced meat (mixture of 500g minced pork and 250g of minced beef) shopping list
- 1/2 bunch of fresh parsley, chopped shopping list
- 2 tablespoons of olive oil shopping list
- 1 egg shopping list
- 2 teaspoons of salt shopping list
- 11/2 teaspoons paprika (sweet) shopping list
- pepper shopping list
- some butter for cooking. shopping list
- For the sauce: shopping list
- 2 tablespoons of butter shopping list
- 1 onion finely chopped shopping list
- 250g of button mushrooms ( if large cut in half) shopping list
- 1 cup of fresh cream shopping list
- white wine shopping list
How to make it
- Soak toast in mixture of milk and soda and add to minced meat.
- Add salt, paprika, pepper to taste, chopped parsley, olive oil and the egg (whisked lightly)
- Mix well and shape into a loaf.
- Place onto a buttered ovenproof dish, place two small pieces of butter on top and bake for 50 minutesat 180-200 degrees centigrade, basting from time to time.
- Place cooked loaf on serving dish and set aside.
- Meanwhile prepare sauce:
- Fry onion in butter until soft. Add mushrooms and continue frying for a few minutes. Add salt, pepper to taste and juices from pan deglazed with some white wine and strained. Add fresh cream and let sauce warm up over low heat for a few minutes.
- Pour over loaf and serve!
