Ingredients
  • 1 pack of whole wheat spaghetti
  • 1 pack of frozen broccoli
  • 1 chopped tomato (optional)
  • Grated cheese for serving
  • :
  • 1/4 cup Walnuts
  • 2 cups basil leaves
  • 1/4 cup grated Parmesan Cheese
  • 3 cloves of garlic
  • 1/3 cup of olive oil
  • pinch of salt

Directions
  1. Put on a pot of water for the pasta - cook pasta as you prep the pesto. Add pack of frozen chopped broccoli to the pasta water for the last 4 minutes of cooking.
  2. Chop the garlic in the food processor
  3. Scrap down the sides of the processor and then add walnuts to the processor and chop.
  4. Add Basil and cheese - repeat.
  5. Slowly add oil - and blend until smooth but not watery.
  6. Spoon pesto into the serving bowl and add about 1/3 cup of the hot pasta water to the pesto - blend.
  7. Pour cooked pasta and broccoli into the pesto and blend with thongs.
  8. Serve with grated cheese and chopped tomatoes!
