I usually think of polenta in a savory way...but this isthe most deliciously moist cake. I got the recipe from Michael Chiarello.

I'm going to try this idea in a savory aspect. I like to "play" with food, making it look like what it's not. So, polenta in a muffin cup, with marscapone cheese as "frosting" and maybe vegetables to take the place of the fruit. Sounds like a fun project.
