How to make it

  • Spread vegetables not mushrooms on a sheet tray, salt, and roast at 350 degrees for 35 minutes. Stirring around halfway through cooking.
  • In the last 10 minutes of cooking add the brioche.
  • Remove and pour into a large microwave safe bowl.
  • Add mushrooms, herbs, pepper, and the 2 cups of hot chicken stock.
  • Mix thoroughly and microwave on high for 6 minutes.
