Tea Smoked Salmon Recipe
Tea-smoking generates a lot of smoke. Open the windows and get as much ventilation as you can. any firm fish can be used

Ingredients
  • Smoking mix:
  • 2 cups (250g) soft brown sugar
  • 2 cups (250g) long grain rice
  • 2 cups (85g) jasmine tea leaves....(You can use any tea or any herbs for the mix. )
  • Vegetable oil
  • 4 salmon fillets, skin on
  • Salt, to season

Directions
  1. Put the sugar, rice and tea leaves into a bowl and mix together.
  2. Line a deep pan or wok with silver foil and pour in the mixture.
  3. Fit a trivet or rack on top.
  4. Pace onto the hob to heat up.
  5. Season the salmon with salt
  6. Then once smoking a little, add the salmon
  7. Drizzle with a little olive oil and cover with a tight fitting lid.
  8. Leave to smoke on the hob for 8-12 minutes depending on the size of the fish.
