Lucious Lemon Tart Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Paulson Estate in Boise, Idaho in 1994.

Ingredients
  • 1 stick butter cut into pieces
  • 1-1/3 cups flour
  • 1/4 cup granulated sugar
  • 1/3 cup ground almonds
  • 8 ounces cream cheese softened
  • 2 cups prepared vanilla pudding
  • 1 can lemon pie filling

Directions
  1. Blend butter, flour, sugar and almonds to crumbly consistency.
  2. Add egg yolk, water and almond extract.
  3. Form dough into ball and chill 30 minutes.
  4. Roll between wax paper to 12" circle and fit into tart pan.
  5. Bake 20 minutes at 350 then cool.
  6. Cream together pudding and vanilla until smooth.
  7. Pour into cooled pastry.
  8. Top with pie filling then chill for several hours.
  9. Serve cold.
