Dilly Meatloaf Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pinion Estate in Mesquite, Texas in 1994.

Ingredients
  • 2 pounds lean ground beef
  • 1 cup fresh breadcrumbs
  • 1/3 cup ketchup
  • 1/3 cup chopped red onion
  • 1/3 cup chopped dill pickle
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Cheese Sauce:
  • 1/2 pound Velveeta cheese spread cubed
  • 1/4 cup milk

Directions
  1. Heat oven to 350.
  2. Combine beef, breadcrumbs, ketchup, onion, pickle, egg, salt and pepper then shape into loaf in shallow baking dish.
  3. Bake for 1 hour and 10 minutes.
  4. Combine cheese and milk until smooth.
  5. Pour cheese sauce over loaf and return to oven for 5 minutes.
  6. Serve immediately.
