Easy Thai Green Curry

Ingredients
  • 4 chicken breasts
  • 2 green chillies
  • 2 cloves garlic
  • thumb of ginger
  • 4 spring onions
  • juice of 1 lime
  • handful of corriander
  • green pepper
  • handful mange tout
  • 400ml coconut milk
  • splash of soy sauce

Directions
  1. Chop finely the chillies, garlic, ginger and spring onions.
  2. Slice the chicken and green pepper.
  3. Fry the green pepper and mange tout and set aside.
  4. Brown the chicken, adding the chillies, garlic, ginger and spring onions for the last minute.
  5. Add the coconut milk, lime juice and soy sauce and reduce for 10 mins.
  6. Add the fried vegetables and the chopped corriander and heat through.

I had a chuckle when I saw "mange-tout"...haven't seen that since I left Scotland!! Over here, it would be Sugar Snap Peas (or, if they aren't available, Chinese Snow Peas)...
