How to make it

  • Chop finely the chillies, garlic, ginger and spring onions.
  • Slice the chicken and green pepper.
  • Fry the green pepper and mange tout and set aside.
  • Brown the chicken, adding the chillies, garlic, ginger and spring onions for the last minute.
  • Add the coconut milk, lime juice and soy sauce and reduce for 10 mins.
  • Add the fried vegetables and the chopped corriander and heat through.

    I had a chuckle when I saw "mange-tout"...haven't seen that since I left Scotland!! Over here, it would be Sugar Snap Peas (or, if they aren't available, Chinese Snow Peas)...
