Banana Pudding

- 3/4 cup sugar, divided shopping list
- 3 Tbsp. cornstarch shopping list
- dash of salt shopping list
- 2 cups milk shopping list
- 4 eggs, separated shopping list
- 1 Tbsp. butter shopping list
- 2 tsp vanilla extract ... OR... shopping list
- 1 tsp. rum extract shopping list
- 40-45 vanilla wafers, divided (more or less to taste) shopping list
- 2 bananas, sliced, divided shopping list
How to make it
- Preheat oven to 400 F.
- In medium saucepan combine 1/2 cup sugar, cornstarch and salt; gradually add milk.
- Cook over medium heat until mixture comes to a boil, stirring constantly.
- Continue to boil 2 minutes, stirring constantly.
- Remove from heat.
- Place egg yolks in medium bowl; gradually stir in half of milk mixture.
- Return mixture to saucepan.
- Cook over medium heat until mixture returns to a boil, stirring constantly.
- Continue to boil 2 minutes, stirring constantly.
- Remove from heat.
- Add butter and extract, mixing well.
- In 1 1/2 quart baking dish layer half of wafers, then half of bananas and pudding.
- Repeat layers.
- In medium bowl beat egg whites to soft peak.
- Gradually add remaining 1/4 cup sugar, beating until stiff.
- Spread over pudding.
- Bake 5-7 minutes or until golden brown.
- Garnish with wafers and banana slices (I usually crumble some wafers as well.)
- You can serve this warm or chilled, either is wonderful.

wow. this takes me back to my childhood when there was not such thing as an "instant" or "quick" banana pudding. Love the rum addition. thanks for posting.
