This is a creamy mussel pot that you can serve as a soup or a main meal. Serve with rice or fresh bread.

Ingredients
  • 200 ml semi-sweet white wine (3/4 cup)
  • 75 ml water (1/2 cup + 1 tablespoon)
  • 2 garlic cloves, chopped
  • 5 ml fish spice (1 teaspoon)
  • salt
  • blackpepper
  • 36 black mussels (clams) washed and scrubbed
  • 500 ml fresh cream (2 cups)
  • parsley (optional)

Directions
  1. Bring whine, water, garlic, spices to the boil.
  2. Put in the mussels.
  3. Stir lightly.
  4. Simmer for 15-20 minutes until all the mussels have opened.
  5. Spoon the mussels out into a bowl.
  6. Pour the liquid into a clean pot.
  7. Stir in the cream.
  8. Put back the mussels.
  9. Let it simmer until it start to thicken.
  10. If it isn't thick enough, thicken with some cornstarch.
  11. Pour into a bowl.
  12. Garnish with parsley.
  13. Serve.
