Scallops with Spinach and Cherry Tomatoes

- 1 tsp olive oil shopping list
- 1/4 cup chopped onion shopping list
- 2 Cups baby spinach shopping list
- 1/2 cup halved cherry tomatoes shopping list
- 1/2 C scallops shopping list
How to make it
- In a 10" skillet heat oil; add onion and cook over medium heat until softened, stirring occasionally, about 1 to 2 minutes.
- Add spinach and tomatoes, cook gently until spinach is wilted
- Push vegetables to the side of the pan and cook scallops until browned
- Combine scallops and vegetables mixture, toss together, cook making sure scallops are done, about 1 minute
- Serve
