How to make it

  • In a 10" skillet heat oil; add onion and cook over medium heat until softened, stirring occasionally, about 1 to 2 minutes.
  • Add spinach and tomatoes, cook gently until spinach is wilted
  • Push vegetables to the side of the pan and cook scallops until browned
  • Combine scallops and vegetables mixture, toss together, cook making sure scallops are done, about 1 minute
  • Serve
