How to make it

  • preheat oven to 350F.
  • wash and pat dry, duck
  • salt and pepper to taste,insert orange quarters in cavity
  • place on rack in shallow roasting pan
  • pierce breast skin and any fat pads you can see,being carefull not to pierce the meat
  • brush with currant mixture
  • bake for 1 hour,remove,enpty any fat in the pan and from the cavity
  • brush with cherry/port sauce and return to oven for 30 minutes-or till done
  • remove from oven and serve with sauce
