roast duck with cherryport sauce

- 4-5# duck shopping list
- 1 orange-quartered shopping list
- 1/2 cup currant jelly-melted shopping list
- 1/2 tsp. lemon juice shopping list
- 1 Tbs. honey shopping list
- salt and pepper to taste shopping list
- cherry sauce: shopping list
- 1 can pitted black cherries shopping list
- 3/4 cup port wine shopping list
- 1 tsp. lemon juice shopping list
- 1 Tbs. corn starch shopping list
- 2 Tbs. butter shopping list
How to make it
- preheat oven to 350F.
- wash and pat dry, duck
- salt and pepper to taste,insert orange quarters in cavity
- place on rack in shallow roasting pan
- pierce breast skin and any fat pads you can see,being carefull not to pierce the meat
- brush with currant mixture
- bake for 1 hour,remove,enpty any fat in the pan and from the cavity
- brush with cherry/port sauce and return to oven for 30 minutes-or till done
- remove from oven and serve with sauce
