Ingredients
  • 4-5# duck
  • 1 orange-quartered
  • 1/2 cup currant jelly-melted
  • 1/2 tsp. lemon juice
  • 1 Tbs. honey
  • salt and pepper to taste
  • cherry sauce:
  • 1 can pitted black cherries
  • 3/4 cup port wine
  • 1 tsp. lemon juice
  • 1 Tbs. corn starch
  • 2 Tbs. butter

Directions
  1. preheat oven to 350F.
  2. wash and pat dry, duck
  3. salt and pepper to taste,insert orange quarters in cavity
  4. place on rack in shallow roasting pan
  5. pierce breast skin and any fat pads you can see,being carefull not to pierce the meat
  6. brush with currant mixture
  7. bake for 1 hour,remove,enpty any fat in the pan and from the cavity
  8. brush with cherry/port sauce and return to oven for 30 minutes-or till done
  9. remove from oven and serve with sauce
