How to make it

  • Melt butter in a 1-1/2 qt. glass casserole in microwave oven (30-45 seconds).
  • Blend flour into melted butter.
  • Add chicken broth & milk gradually, stirring until smooth.
  • Cook in microwave 6-7 minutes, or until thickened, stirring after each minute.
  • Add seasonings, chicken, peas & pimento to sauce.
  • Cook for an additional 5 minutes or until heated to serving temperature.
  • Stir in cheese and serve over toast, biscuits or mashed potatoes.

    great recipe! I had the same cookbook, I bet. LOL use to substitute turkey for the chicken (to get rid of it at Thanksgivng & Christmas). thanks for posting; I've misplaced my book...
