Mini Choclate Chippy Zucchini Muffins Recipe
Who does not love chocolate chips and zuchini rolled up into a muffin !!! serves 12 large or 24 mini

Ingredients
  • 1 cup quick rolled oats
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • 1/3 cup sugar
  • 1 cup shredded zucchini, packed
  • 2 tbsp canola oil
  • 1 egg, lightly beaten
  • ¾ cup skim milk or 1%
  • ½ cup chocolate chips

Directions
  1. Preheat oven to 400º
  2. Line a mini muffin pan with muffin cups or spray with canola oil cooking spray.
  3. In a large bowl stir together flour, baking powder, cinnamon, and sugar. Set aside.
  4. In a medium bowl combine zucchini, canola oil, egg and milk.
  5. Add wet ingredients to the dry ingredients and stir until just moist.
  6. Add in chocolate chips.
  7. Spoon the batter into the muffin tin and bake for 15 minutes or until nice and done in the middle
  8. ***** If making regular sized muffins increase cooking time to 20 minutes*****
