Creamy Corn And Potato Soup Recipe

Ingredients
  • 1 small onion chopped
  • 2 carrots, diced
  • 2 Tbsp butter
  • 3 cans (14 oz each) ready to use chicken broth
  • 4 - large potatoes, peeled and diced ( I've used red new potatoes with the skin on also)
  • 3 cans (14 3/4 oz each) cream style corn
  • 2 cups ( 1 pint ) heavy cream
  • 1 tsp black pepper
  • 1 tsp sugar

Directions
  1. In your soup pot, saute onions and carrots in butter over medium heat for 5-6 minutes, or until tender.
  2. Add broth and potatoes, bring to a boil and cook for 12 - 15 minutes, or until potatoes are fork tender.
  3. Add remaining ingredients and cook for 8-10 minutes more, or until heated through.
  4. Serve immediately.
