Turkey Mango Pinwheels Recipe
The sweetness of the mango contrasts with the saltiness of the smoked turkey. Everyone loves these little appetizers. Just cut the tortillas in 1/2 for a different kind of lunch sandwich.

Ingredients
  • 6 oz. soft goat cheese
  • 1/3 cup bottled mango chutney
  • 4 10 inch flour tortillas
  • 8 oz. thinly sliced smoked turkey breast
  • 2 cups arugula or fresh spinach leaves
  • 8 fresh or canned mango slices, drained

Directions
  1. In a small bowl, stir together the goat cheese and mango chutney. Spread mixture onto tortillas, leaving a 1 inch space along an edge of each tortilla
  2. Arrange turkey slices on goat cheese mixture. Top the arugula leaves. Cut any large mango slices in half lengthwise; pat dry. Place mango slices on greens along the edge opposite the 1" space. Roll up tortillas tightly, starting with the edge with the mango. Cover and chill for at least 30 minutes or up to 4 hours.
  3. To serve, cut diagonally into 3/4 inch thick slices.
  4. Makes about 32 slices
