Gluten Free Spicy Meatballs In Tomato Sauce Recipe

Ingredients
  • For the Meatballs
  • 100 gms minced beef
  • 1/2 medium onion - very finely chopped
  • 1 garlic clove - finely chopped or crushed
  • 2 tablespoons finely chopped spinach (I use frozen)
  • Spice to your taste - (I use large pinch chilli powder and 1/4 teaspoon jerk seasoning - this makes medium spicy meatballs.)
  • salt and pepper to taste
  • 1/2 beaten egg
  • Olive or veg oil for frying
  • For the Sauce
  • 200gm tin chopped tomatoes
  • 1/2 medium onion diced
  • 1 clove garlic finely chopped
  • pinch dried mixed herbs
  • 1/2 glass red wine
  • 100mls water
  • splash balsamic wine (optional)

Directions
  1. Put all meatball ingredients in a mixing bowl and - using your hands - mix together, kneading until all ingredients are thoroughly combined
  2. break off pieces of the meat mixture and rolled into balls - should make 10 - 12 balls.
  3. Wash your hands thoroughly!
  4. Heat olive oil in a frying pan/skillet and add the meatballs turning them until they are browned on all sides.
  5. Meanwhile start the sauce - heat oil in a saucepan and add onions and garlic, saute for a couple of minutes.
  6. Add all other sauce ingredients and bring to the boil.
  7. Now pour some of the sauce onto the meatballs in the frying pan (to pick up all the juices) then return the lot to the saucepan.
  8. Cover and simmer for around 40 mins until the sauce has thickened to your liking.
