Tomato Sauce

- 1 Tin of chopped tomatoes shopping list
- 6 cloves of garlic shopping list
- 2 shallots shopping list
- 1 Cup of extra virgin greek olive oil shopping list
- 1 teaspoon of chopped basil shopping list
- 1 Table spoon of Pernod shopping list
- 1 Bunch of thyme shopping list
- 1 Small bunch of oregano shopping list
- 1/2 a baie leave shopping list
- 1 Soup spoon of caster sugar shopping list
- salt and pepper shopping list
How to make it
- Finelly chop the garlic (don't forget to take the center off) and the shallots.
- Sweat off the herbs, the garlic and the chopped shallots with half of the olive oil for 8 minutes.
- Add the tomatoes, the sugar the rest of the olive oil.
- Gently simmer for 1h30.
- Season well and remove the thyme and the baie leaf.
- It is ready!
- Note that you can replace all the fresh herbs with a table spoon of dried mixed herbs.
