This is a very versatile sauce that can be used with pasta, chicken or fish dishes.

Ingredients
  • 1 Tin of chopped tomatoes
  • 6 Cloves of garlic
  • 2 shallots
  • 1 Cup of extra virgin Greek olive oil
  • 1 teaspoon of chopped basil
  • 1 Table spoon of Pernod
  • 1 Bunch of Thyme
  • 1 Small bunch of oregano
  • 1/2 a baie leave
  • 1 Soup spoon of caster sugar
  • Salt and pepper

Directions
  1. Finelly chop the garlic (don't forget to take the center off) and the shallots.
  2. Sweat off the herbs, the garlic and the chopped shallots with half of the olive oil for 8 minutes.
  3. Add the tomatoes, the sugar the rest of the olive oil.
  4. Gently simmer for 1h30.
  5. Season well and remove the thyme and the baie leaf.
  6. It is ready!
  7. Note that you can replace all the fresh herbs with a table spoon of dried mixed herbs.
