How to make it

  • Finelly chop the garlic (don't forget to take the center off) and the shallots.
  • Sweat off the herbs, the garlic and the chopped shallots with half of the olive oil for 8 minutes.
  • Add the tomatoes, the sugar the rest of the olive oil.
  • Gently simmer for 1h30.
  • Season well and remove the thyme and the baie leaf.
  • It is ready!
  • Note that you can replace all the fresh herbs with a table spoon of dried mixed herbs.
