How to make it

  • Whisk together egg, zest, milk, yogurt, brown sugar, and butter.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Add the milk mixture and whisk until just combined. If the mixture seems too thick, thin with additional milk.
  • Stir in blueberries.
  • Brush melted butter on griddle or skillet.
  • Using approximately 1/3 C. batter per pancake, cook over medium heat, 2 minutes per side or until golden, brushing on more butter after each batch.
