Sweet Thai Chilli Crab And Corn Muffins Recipe
I love thai flavours at the moment. I came up with these as something to grab for lunch. In my house you can never have enough grab and go foods we are always running.

Ingredients
  • 80mls Sweet Chilli Sauce
  • 230mls Milk
  • 1 Egg
  • 1 Tablespoon vegetable oil
  • 300g Self Raising Flour
  • 200g Corn Kernels
  • 200g Tin Crab
  • 2 tablespoons chopped coriander
  • 2 tablespoons sliced spring onions

Directions
  1. Preheat oven to 180°C
  2. Place Sweet Chilli Sauce, milk, egg and oil in a mixing bowl and whisk together until combined.
  3. Sift flour and salt in a separate bowl, then stir in corn, drained crab, coriander and spring onions. Combine thoroughly, then make a well in the centre. Pour in the liquid, a little at a time stirring gently until well mixed.
  4. Spray deep muffin tin with vegetable spray and divide the mixture between them.
  5. Bake in the oven for about 20 minutes or until well risen.
  6. Serve warm is best but cold is good too.
