Beef And Veggie Stew

- beef stew chopped meat shopping list
- 2 potatoes peeled & cubed shopping list
- 2 carrots peeled & cut in large chunks shopping list
- 1/2 onion sliced in O's shopping list
- 1 corn Cobb cut in to about 4 pieces shopping list
- 2 tbs.olive oil shopping list
- 1 tbs. butter shopping list
- 3 garlic cloves grated shopping list
- 1 cup red cooking wine shopping list
- 2 sticks celery chopped shopping list
- 1 squash cut in large chunks shopping list
- 4 mushrooms sliced shopping list
- 1 can of diced tomatoes (try and use the flavored tomatoes) shopping list
- 5 cups of beef broth shopping list
- 1/2 cup instant rice shopping list
- 2 tsp. salt shopping list
- 1 tsp. pepper shopping list
- 2 tsp. lemon pepper shopping list
- 2 tsp. basil shopping list
- 2 tsp. parsley shopping list
- 2 bay leaves shopping list
How to make it
- Brown meat with a little oil and 1 grated garlic clove
- don't cook meat all the way just brown outsides
- In a separate frying pan (large) add the olive oil and butter
- grate the other 2 garlic cloves in the oil butter mixture
- once garlic starts to roast
- add the onion O's, potatoes, carrots, and corn
- season with salt and pepper
- add 1 cup of beef broth
- cover and let simmer for about 10-15 minutes
- add browned meat to slow cooker
- add 3 cups of beef broth
- add sauteed veggies
- deglaze meat pan with red wine
- than take that liquid and deglaze the veggie pan
- add all that liquid to the crock pot
- add the squash, celery, and mushrooms
- add the can add tomatoes
- spice it up with the basil, parsley, lemon pepper, salt and pepper
- let it cook on low for 3 hours
- add rice two hours prior to soup being finished
- add last cup of beef broth
- cover and let it finish
- serve with a little lemon and scoop up with tostada shells
