How to make it

  • Brown meat with a little oil and 1 grated garlic clove
  • don't cook meat all the way just brown outsides
  • In a separate frying pan (large) add the olive oil and butter
  • grate the other 2 garlic cloves in the oil butter mixture
  • once garlic starts to roast
  • add the onion O's, potatoes, carrots, and corn
  • season with salt and pepper
  • add 1 cup of beef broth
  • cover and let simmer for about 10-15 minutes
  • add browned meat to slow cooker
  • add 3 cups of beef broth
  • add sauteed veggies
  • deglaze meat pan with red wine
  • than take that liquid and deglaze the veggie pan
  • add all that liquid to the crock pot
  • add the squash, celery, and mushrooms
  • add the can add tomatoes
  • spice it up with the basil, parsley, lemon pepper, salt and pepper
  • let it cook on low for 3 hours
  • add rice two hours prior to soup being finished
  • add last cup of beef broth
  • cover and let it finish
  • serve with a little lemon and scoop up with tostada shells
