This is a great soup for a rainy day. I like to add a little lemon to my bowl and scoop it on tostada shells

Ingredients
  • Beef stew chopped meat
  • 2 potatoes peeled & cubed
  • 2 carrots peeled & cut in large chunks
  • 1/2 onion sliced in O's
  • 1 corn Cobb cut in to about 4 pieces
  • 2 tbs.olive oil
  • 1 tbs. butter
  • 3 garlic cloves grated
  • 1 cup red cooking wine
  • 2 sticks celery chopped
  • 1 squash cut in large chunks
  • 4 mushrooms sliced
  • 1 can of diced tomatoes (try and use the flavored tomatoes)
  • 5 cups of Beef Broth
  • 1/2 cup instant rice
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. lemon pepper
  • 2 tsp. basil
  • 2 tsp. parsley
  • 2 bay leaves

Directions
  1. Brown meat with a little oil and 1 grated garlic clove
  2. don't cook meat all the way just brown outsides
  3. In a separate frying pan (large) add the olive oil and butter
  4. grate the other 2 garlic cloves in the oil butter mixture
  5. once garlic starts to roast
  6. add the onion O's, potatoes, carrots, and corn
  7. season with salt and pepper
  8. add 1 cup of beef broth
  9. cover and let simmer for about 10-15 minutes
  10. add browned meat to slow cooker
  11. add 3 cups of beef broth
  12. add sauteed veggies
  13. deglaze meat pan with red wine
  14. than take that liquid and deglaze the veggie pan
  15. add all that liquid to the crock pot
  16. add the squash, celery, and mushrooms
  17. add the can add tomatoes
  18. spice it up with the basil, parsley, lemon pepper, salt and pepper
  19. let it cook on low for 3 hours
  20. add rice two hours prior to soup being finished
  21. add last cup of beef broth
  22. cover and let it finish
  23. serve with a little lemon and scoop up with tostada shells
