Ingredients
  • 2 Tbs. flour
  • 2 Tbs. all-purpose flour
  • 3/4 cup milk
  • 2 Tbs. raisins
  • 4 Tbs. hazelnuts or almonds-chopped
  • 2 Tbs. course-grained mustard
  • 1 tsp. fresh lemon juice
  • 1/8 tsp. hot sauce-or to taste
  • salt and fresh ground pepper to taste
  • 1/2 tsp paprika
  • 1# perch fillets
  • 2 bananas- peeled and sliced

Directions
  1. preheat oven to 375F.
  2. melt butter in a skillet over medium heat
  3. gradually add flour and stir well, cook till slightly browned
  4. gradually stir in milk,rasins and nuts
  5. continue to stir and add mustard,lemon juice and hot sauce
  6. remove from heat and set aside
  7. season fish with salt,pepper and paprika on both sides
  8. place in an oven proof dish, arrange banana slices over fish and pour mustard mixture over all
  9. bake uncovered,30-40 minutes-till fish flakes easily
