Anari is the Cypriot name of the cheese used and tourta means cake. In Greece they call it myzithra and it is a very easy to make dessert, and very tasteful.

Ingredients
  • 2 packets of sfogliatine biscuits
  • 1 kilo of unsalted anari cheese (or anthotyro, which is a white whey cheese, a variation of and similar to myzithra, made from sheep's and goat's milk). if you would like to see the cheese go to http://en.wikipedia.org/wiki/Mizithra
  • 1 glass of sugar
  • 1 teaspoonful of ground cinnamon
  • ½ glass of rose water
  • 1 glass of walnuts
  • Ingredients for Whipping cream
  • 1 fresh cream
  • 1 spoonful of frosting sugar
  • 1 vanilla
  • (whip all together)
  • Ingredients for the caramel
  • 1 glass of sugar
  • 1 spoonful of lemon juice
  • Some spoonfuls of water until sugar is totally wet
  • 1 glass of almonds baked in the oven until brown

Directions
  1. Directions for whipping cream:
  2. Whip the cream and add the frosting sugar and the vanilla and place in refrigerator.
  3. Instructions for the caramel
  4. Put the almonds in an oven tin and bake until roasted. Remove and let them cool down. Then grind in the multi just once or twice because we need big pieces..
  5. Place sugar, lemon juice and water in a small pan or frying pan and stir until browned. Add almonds and mix.
  6. Then place on a grease-proof paper until cold.
  7. Break into small pieces (we will use this at the end).
  8. Putting the cake together:
  9. Mix the anari cheese with a fork or by hand mixer and add the sugar, the whipped cream (2/3) the cinnamon and rose water and mix until creamy.
  10. Place a layer of biscuits in a pyrex or plastic rectangular vessel, then a layer of anari cream; sprinkle on top the caramelized almonds and then another layer of biscuits. If there are not enough biscuits you can split them in two pieces.
  11. Keep the broken ones to sprinkle on top (about two or three will suffice).
  12. Place the second layer of anari cream and on top the remaining 1/3 of the whipping cream.
  13. Crumble the biscuits and sprinkle on top as well as caramelized almonds and decorate with whole walnuts.
  14. Always keep in refrigerator and serve cold.
