Ingredients
  • 6 firm cucumbers
  • 1-1/2 tbsp Splenda
  • 1/4 c salt
  • 1/4 c water
  • 2 tbsp mixed pickling spices

Directions
  1. Wash and dry cucumbers
  2. Cut into strips to fit half pint jars
  3. Place in large bowl
  4. Sprinkle with salt & let stand overnight
  5. Rinse & rinse well several times
  6. Combine splenda, water & vinegar in a large kettle, bring to boil
  7. Add pickling spice tied in a cheesecloth bag
  8. Add cucumbers
  9. Reduce heat, simmer 15 mins
  10. Pack cucumbers into hot sterlized half pint jars
  11. Heat liquid again to boiling, pour over pickles in hot jars
  12. Seal at once
  13. Process for 10 mins in simmering water to cover jars.
  14. Makes 6 half pints.
