  • 1.5kg uncooked king prawns
  • 2 tbs cooking oil
  • 1 large (200g) onion, sliced
  • Masala paste
  • 2/3 cup firmly packed fresh coriander leaves
  • 1/3 cup firmly packed fresh mint leaves
  • 2 tbs water
  • 2 tbs sesame oil
  • 2 cloves chopped garlic
  • 1 tbs chopped fresh ginger
  • 2 tbs white vinegar
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 1 tsp ground fennel
  • 1/2 tsp ground cardamom
  • 1 tsp salt or to taste

Directions
  1. Shell and devein prawns, leaving the tails intact.
  2. Heat cooking oil; cook onion, stirring, until browned lightly.
  3. Add masala paste ; cook, stirring, until fragrant. Stir in prawns; cook about 5 minutes or until tender.
