Diabetic Baked Beans

- 1 bag dry navy beans shopping list
- 1 tbsp pepper shopping list
- 2 c onions, finely chopped shopping list
- 2 tsp chili powder shopping list
- 4 cloves garlic, finely chopped shopping list
- 1 tsp paprika shopping list
- 4-6 tbsp olive oil shopping list
- 2 tbsp dry mustard shopping list
- 1/2 lb bacon, chopped shopping list
- 2 tbsp shopping list
- 3 cans chicken broth shopping list
- 2 bay leaves shopping list
- 2 c rice syrup shopping list
- salt to taste shopping list
- 1 c sugar free bbq sauce (or you can use diabetic bbq sauce recipe) shopping list
- 2 sprigs fresh thyme, strip leaves off stem shopping list
- 1-1/2 c catsup shopping list
How to make it
- Pour navy beans in large bowl, cover completely with water, 2-3 inches above beans
- Cover and soak beans overnight
- Put beans in a large pot and cook 1-2 hours til tender
- Preheat oven to 350 degrees
- Cover skillet with 4 tbsp olive oil
- Saute onions & garlic til soft, but not browned
- In same skillet, cook bacon til crisp
- Deglaze pan with 1 can chicken broth
- In large mixing bowl, combine beans with onion mixture, remaining olive oil & deglazed juice
- Add rice syrup, catsup, bbq sauce, lemon juice, remaing chicken broth, spices & herbs and mix well
- Transfer mixture into a large casserole
- Top with chopped bacon before cooking.
- Bake for about 30 mins
- Remove bay leaves before serving
- Serve Hot
