Ingredients
  • 1 bag dry navy beans
  • 1 tbsp pepper
  • 2 c onions, finely chopped
  • 2 tsp chili powder
  • 4 cloves garlic, finely chopped
  • 1 tsp paprika
  • 4-6 tbsp olive oil
  • 2 tbsp dry mustard
  • 1/2 lb bacon, chopped
  • 2 tbsp
  • 3 cans chicken broth
  • 2 bay leaves
  • 2 c rice syrup
  • salt to taste
  • 1 c sugar free bbq sauce (or you can use diabetic bbq sauce recipe)
  • 2 sprigs fresh thyme, strip leaves off stem
  • 1-1/2 c catsup

Directions
  1. Pour navy beans in large bowl, cover completely with water, 2-3 inches above beans
  2. Cover and soak beans overnight
  3. Put beans in a large pot and cook 1-2 hours til tender
  4. Preheat oven to 350 degrees
  5. Cover skillet with 4 tbsp olive oil
  6. Saute onions & garlic til soft, but not browned
  7. In same skillet, cook bacon til crisp
  8. Deglaze pan with 1 can chicken broth
  9. In large mixing bowl, combine beans with onion mixture, remaining olive oil & deglazed juice
  10. Add rice syrup, catsup, bbq sauce, lemon juice, remaing chicken broth, spices & herbs and mix well
  11. Transfer mixture into a large casserole
  12. Top with chopped bacon before cooking.
  13. Bake for about 30 mins
  14. Remove bay leaves before serving
  15. Serve Hot
  16. Enjoy!
